An easy way to incorporate chia seeds, these delicious oatmeal cookies contain no eggs or butter and are easy to make. Cookies will be soft; allow them to cool completely.

Ingredients

  • 2 cups rolled oats
  • 1 cup brown sugar
  • ⅔ cup whole wheat flour
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ⅔ cup applesauce
  • 3 tablespoons coconut oil
  • 1 cup dried cranberries
  • ½ cup chocolate chips (Optional)
  • ¼ cup shredded unsweetened coconut (Optional)

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Combine oats, brown sugar, flour, chia seeds, cinnamon, baking soda, baking powder, and salt in a bowl. Stir applesauce and coconut oil into oat mixture until dough is evenly mixed. Fold cranberries, chocolate chips, and shredded coconut into dough.
  3. Drop spoonfuls of dough 2 inches apart onto the prepared baking sheet.
  4. Bake in the preheated oven until edges of cookies are lightly browned, 10 to 15 minutes.
