This Greek street corn salad, inspired by Mexican elote, features grilled corn, cucumbers, feta cheese, and a red wine vinaigrette.

Ingredients

  • 6 ears fresh corn , shucked
  • 1/3 cup mayonnaise
  • 6 ounces feta cheese
  • 1 medium English cucumber , seeded and diced
  • 1 tablespoon red wine vinegar
  • 1/4 cup chopped parsley , plus more for garnish
  • 1 lemon, juiced
  • 1/4 teaspoon smoked paprika , plus more for garnish
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Steps

  1. Heat a grill or grill pan to high heat. Add corn, and cook, turning occasionally, until partially charred. Let cool.
  2. Cut kernels from corn cob and add them to a large bowl.
  3. Reserve 2 tablespoons feta for topping and add remaining feta to corn. Stir in cucumber, parsley, mayonnaise, red wine vinegar, lemon juice, smoked paprika, salt, and pepper until just combined.
  4. Transfer to a serving bowl and top with reserved feta. Sprinkle with parsley and smoked paprika as desired.
