This Greek street corn salad, inspired by Mexican elote, features grilled corn, cucumbers, feta cheese, and a red wine vinaigrette.

Ingredients
- 6 ears fresh corn , shucked
- 1/3 cup mayonnaise
- 6 ounces feta cheese
- 1 medium English cucumber , seeded and diced
- 1 tablespoon red wine vinegar
- 1/4 cup chopped parsley , plus more for garnish
- 1 lemon, juiced
- 1/4 teaspoon smoked paprika , plus more for garnish
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Steps
- Heat a grill or grill pan to high heat. Add corn, and cook, turning occasionally, until partially charred. Let cool.
- Cut kernels from corn cob and add them to a large bowl.
- Reserve 2 tablespoons feta for topping and add remaining feta to corn. Stir in cucumber, parsley, mayonnaise, red wine vinegar, lemon juice, smoked paprika, salt, and pepper until just combined.
- Transfer to a serving bowl and top with reserved feta. Sprinkle with parsley and smoked paprika as desired.
